Peggs Facts: Ingredients, Nutrition, Price and How It Works
Peggs is a shelf-stable plant-based egg made from chickpeas. One 7 oz (200 g) pouch makes a dozen egg equivalents for scrambles, omelettes and baking. It is vegan, gluten-free, soy-free, nut-free and dairy-free, needs no refrigeration, and is made in the USA by Peggs Food Co. in Sacramento, California.
What is Peggs?
Peggs is a dry plant-based egg blend. You whisk it with water, then cook or bake it the way you would use a conventional egg. The black salt (kala namak) in the blend gives it an egg-like sulfur aroma and savory flavor.
Ingredients
Chickpeas, potato starch, flaxseed, nutritional yeast, black salt (kala namak), cellulose, gellan gum, baking powder, turmeric, onion powder.
How do you use Peggs?
Mix 1/4 cup of Peggs with 1/4 cup of water to replace two eggs. Whisk until smooth, adjust the water slightly for the consistency you want, then cook or bake as normal. For baking, add the dry Peggs to your dry ingredients and the water to the wet ingredients. Results vary in recipes that rely heavily on egg structure, such as soufflé or meringue.

Allergens
Peggs is gluten-free, soy-free, nut-free and dairy-free. The main protein source is chickpea, a legume. If you have a legume allergy, consult your doctor before use. It is produced in a facility that also handles other legumes.
Shelf life and storage
Most pouches last a year or more. Check the Best By date on the pouch. Store in a cool, dry place away from light and moisture. Once opened, reseal the zip and use within a few months. No refrigeration is needed at any stage.
